Miranda Kerr's apple and bannana gf oat muffins


 
This recipe was taken from SELF magazine. As soon as I knew that Miranda Kerr makes these muffins, I knew I had to try them out. This woman is not only a Victoria's secret angel, but a loving mom and an avid yogi!. I absolutely love what she stands for and who she is as a person. From her all natural and organic skincare line KORA to her down to earth instagram pictures. these muffins look delicious and are full of super foods and are also GF!
 
 

Ingredients:

  • 2 cups oatmeal                                      
  • 2 teaspoons baking powder                                
  • 1/4 teaspoon baking soda                                        
  • 1 1/2 teaspoons ground cinnamon                                        
  • 1/4 cup honey                                        
  • 2 tablespoons chia seeds                                        
  • 1/4 cup goats milk yogurt                                        
  • 1/2 cup apple juice                                        
  • 2 eggs, lightly beaten                                        
  • 1 egg white                                        
  • 4 tablespoons coconut oil                                        
  • 1/2 teaspoon vanilla bean powder                                        
  • 2 large green organic apples                                        
  • 2 ripe bananas                                        
  • 1/2 cup chopped walnuts                                        

How to:

- In a food processor, grind the oats into a flour-like consistency. Add walnuts and grind. In a large mixing bowl, combine ground oats and walnuts, baking powder and baking soda.
 
- In a separate small bowl, lightly beat eggs and egg white. Mix in yogurt and apple juice. In a small pot, mix coconut oil, cinnamon, vanilla and honey over low heat until it becomes syrupy and combine with egg mixture.
 
-Add wet mixture to dry mixture, and slowly fold in apple and bananas. Line a muffin pan with paper liners or lightly grease your muffin tins and fill 3/4 full. Bake for 40 minutes or until a toothpick is inserted in the center off the muffin and comes out clean.
 
-Allow the muffins to cool for 15 minutes. Sprinkle with cinnamon before serving.

After that, I'll make an energizing smoothie with lots of ingredients, including chia seeds, raw cacao, goji berries, fresh coconut water and protein powder. It's a recipe I made up. I call it the 'Miranda mix'."

Bourbon Pumpkin Pie...GF and Vegan

With Halloween being just around the corner I decided that this would be the perfect recipe to showcase.

Pumpkin...the beautiful obsession that we drown ourselves in fall. Coffee, cakes, pies, spices and teas...this little orange rinds seems to be the star in every dish!

Bourbon makes this pie a lot better and it goes great with a dollop of coconut whipped cream. Perfect for a Halloween dinner or displayed at the thanksgiving table.


Bourbon Pumpkin pie with walnut crumble



Crust

- 1 1/2 cups superfine brown rice flour
- 3/4 cup sorghum flour
- 1/2 cup tapioca starch
- 1 tsp xanthan gum
- 2 tbsp organic granulated sugar
- 1/2 tsp sea salt
- 8 tbsp vegan margarine
- 2 tbsp apple cider vinegar
- 1/4 cup + 1 tbsp very cold water

Filling

- 1/2 cup raw cashews, soaked for at least 1 hour and then drained
- 1/4 cup bourbon
- 2 tbsp flaxseed meal mixed with 4 tbsp water
- 3/4 cups organic granulated sugar
- 2 cups canned pumpkin (if using ☺fresh, make sure it is super well drained or the pie will be watery)
- 1/4 cup +1 tbsp coconut milk
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/4 tsp cardamom
- 1 tsp fresh ginger
- 1/2 tsp sea salt
- 2 tbsp superfine brown rice flour

Topping

- 1/2 cup walnuts, pulverized in food processor until crumbly
- 1 tsp cinnamon
- 2 tbsp organic granulated sugar

To make crust:

Stir together the brown rice flour, sorghum, tapioca starch, xanthan gum, sugar and salt into a large bowl. Using a pastry blender, mix in the margarine until crumbly. Make a well in the center of the flour, and stir in the vinegar and cold water with fork until the mixture comes together into a thick dough. Shape into patty and chill in fridge at least one hour.

*Preheat oven to 400 °F.

Roll out in between two pieces of parchment or saran wrap and then flip over to lay pie crust evenly in standard sized pie pan. Pinch top to make the pie fancy, or flute it, or whatever your preferred method is, and then pierce bottom with a fork. Place baking beans (pastry weights) or dried beans on top of parchment circle inside of crust and bake for 10 minutes in preheated oven. Remove from oven
and let cool. And, be sure to take those baking beans out too.

To make filling:

Combine bourbon and soaked cashews in food processor and let blend until very smooth, about 7-10 minutes. This is a good thing to do while you are rolling out and shaping your pie crust. Make sure the cashews are extremely smooth before proceeding.

*Preheat oven to 375 °F.

Once cashews are very smooth, add in prepared flaxseed and continue to blend until well combined. Transfer to bowl and stir in sugar, pumpkin, coconut milk, spices, salt and superfine brown rice flour. Spread into baked pie shell and cover edges of crust with foil or pie shield.
Bake for 15 minutes at 375 °F and in the meantime, combine all ingredients for “topping” into small bowl. After pie has baked 15 minutes, sprinkle topping onto pie and bake an additional 45 minutes.

Transfer to wire rack and let cool one hour and then transfer to fridge and let cool completely before serving.

Slice it up and serve with some whipped coconut cream.

As we drown ourselves with countless of tasks on a daily basis, its good to take some time to clear out the mind. Detox yourself from negative thoughts, stress, insecurities and self-criticism so that your path to optimal health and happiness can be clear.


Ask yourself the following questions:

- What do you truly want?
- Is there something you have always wanted to do but haven't? Don't know what you want in life?

Let me help you find a path to follow. Answer the following questions the best way possible way you can so you can have a clearer understanding about your passion

1. What three things in life you don't like doing?
2. What three things in life you like doing?
3. What three things do you value about yourself?
4. What limit your success?
5. What three things you've always wanted to do?
6. Why haven't you done them?

Now based on those answers image in it on a piece of paper. Illustrate it, get creative and let your creative mind flow! Display it proudly on your wall and really feel, smell and see it in your future. This is the life you must find the courage to live. Really go after it and quit making excuses, time is still going to pass by, so why not doing something that's going to get you were you want to be.

Based on this you should be able to pin-point the 'negativity' in your life. Find the things that you need to change; maybe is to be more positive; so when times are tough think that 'the toughest battles are given to the strongest soldiers'.

Start out by picking out the most important thing in the list and make it your goal. Give it a realistic time frame. Remember that if you don't achieve it by that day, that does not make you a failure. Extend the time of the goal and see what you can do differently.
